Shred the unripe green papaya, carrot and zucchini or cut in juliennes.
Cut cherry tomatoes in halves.
In a bowl, mix the vegetables with the coriander leaves and the peanuts.
Add the lime juice, fish sauce, and a touch of white wine vinegar. Mix and set aside.
Place warm water in a large plate. Briefly, dip one rice paper wrapper into the plate with water to wet just enough to make it pliable and then lay flat. Place it on a dry towel.
Fill the center with
the salad mix and roll it up away from you. Repeat with the remaining filling and wrappers.
